- W1005166501 abstract "Nematodes are roundworms, some of which can be transmitted by food to humans. In some cases, humans, in addition to animals, can act as reservoir hosts. Most of these pathogens are zoonotic and have a cosmopolitan distribution (e.g., Anisakis, Ascaris, Gnathostoma, Pseudoterranova, Toxocara, Trichinella); others are prevalent in the tropics (e.g., Angiostrongylus, Capillaria, Trichostrongylus) or in more restricted regions (e.g., Bayliascaris). Humans acquire Trichinella by the consumption of raw or undercooked meat from domestic animals (e.g., swine) and game (e.g., wild boar, walrus, bear); Anisakis and Pseudoterranova by the consumption of raw saltwater fish and cephalopods; Capillaria philippinensis by the consumption of raw freshwater or brackish-water fish; Ascaris, Toxocara, and Trichostrongylus by the ingestion of vegetables and fruits contaminated by animal (e.g., pig, cat, dog, sheep) or human feces; Angiostrongylus by the ingestion of raw snails, slugs, freshwater crustaceans, frogs, or lizards; and Gnathostoma by the ingestion of raw meat from freshwater fish, frogs, chickens, or snakes. Most of these pathogens reach humans due to low socioeconomic conditions, poor sanitation, ignorance, and customary culinary practices. Transmission of most of these pathogens to humans can be easily prevented by cooking meat, fish, or invertebrate animals; improving sanitary and food production conditions; and improving consumer and farmer education; whereas, those pathogens transmitted by vegetables and other vehicles can be prevented by an appropriate disposal of animal and human feces and an improvement of animal husbandry practices." @default.
