Resistant starch shares some common properties with soluble dietary fibers: it is poorly modified in the small intestine but is extensively broken down by the colonic microflora, which results in the production of short-chain fatty acids (SCFA). Like fibers sensu stricto, resistant starch affects various metabolic processes, such as glycemic control or lipid metabolism. Resistant starch is of interest because it is devoid of some of the drawbacks that limit the use of soluble fibers such as excessive viscosity or problems of palatability, and it can be incorporated into most starchy foods included in the human diet." @default.
