- W1450355887 abstract "Publisher Summary This chapter discusses the importance of metabolic and physiological chemical considerations in evaluating the safety of antioxidants for food and food-wrapping materials. It deals only with synthetic hindered phenolic antioxidants. Each phenolic group belonging to the individual antioxidants, except BHA, is hindered by the steric effects of tert -butyl substituents in each ortho -position. The chapter also deals with certain aspects of antioxidant action. The present studies on the metabolic fate of BHA are made with isotopically unlabeled antioxidant, and it is a fair comment that the design of experiments and the resulting data are entirely dependent on the scope and limitations of the analytical methods employed. In this chapter, reference has thus been made to experimental detail. With respect to evaluation of the safety of food antioxidants, the chapter discusses toxicological information on ionox 330, BHA, and BHT; relationship of metabolic fate and related aspects of physiological chemistry to evaluation of the safety-in-use of food additive; and a possible role for synthetic antioxidants in nutritional biochemistry." @default.
