For the study of the biological function of carotenoids, the chapter focuses on their ability to capture free radicals and function as antioxidants. To understand the relevance of in vitro assays, some of the in vivo studies that have been performed are described. In vivo β-carotene treatment of mice with mammary carcinoma or adenocarcinoma, rats with colon carcinoma and hamsters with salivary and oral carcinomas have resulted in the inhibition of tumor growth. β-Carotene has been shown to inhibit initiation or promotional phases in oral carcinogenesis as well as to prevent oral carcinoma development. β-Carotene, therefore, appears to induce a change in the growth pattern of tumor cells at an early stage in their development. In an unrelated area, an emulsion of β-carotene produces a maintainable serum level in rabbits and accumulates in atherosclerotic plaques in these rabbits. The plaques are eliminated using a laser with a visible light frequency directed at the β-carotene containing plaques in both rabbits and humans. The in vivo results have provided sufficient reason to pursue the mechanisms of action for the carotenoids." @default.
