Theories of olfaction based on structure/odour relationships (SORs) have been a feature of fragrance chemistry since the nineteenth century and some of these are discussed in the chapter. SARs are based on the assumption that the molecular structure of any chemical will determine all of its physical, chemical and biological properties. Principal component analysis (PCA) is a statistical technique that reduces a multi-dimensional input to two or three dimensions which then aids in correlation with the biological activity. The chapter discusses pitfalls into which the unwary researcher can fall. It also discusses additional obstacles of which the researcher should be aware. SORs have proved very useful in the design of novel fragrance ingredients. The most consistently accurate structure/odour model is Amoore's camphor model." @default.
