At the moment, GOS are predominantly used in infant nutrition and are recognized as potential tool for the modulation of the colonic microbiota toward a healthy balance. The potential of GOS, from an industrial perspective, is determined by a number of important needs to become an attractive ingredient for the food market, for example meeting regulatory aspects (safety aspects), proven benefits, availability of large volumes, and last but not least, a reasonable price. Apart from these points, more intrinsic and/ or physical characteristics of GOS are relevant, such as stability of the product (storage stability) during processingand convenience (easy to handle). In this chapter, an overview is given of all the issues that are playing a role in applying GOS on an industrial scale." @default.
