It extends the thinking of food microstructure, moving on from its creation, by design, and how it is deconstructed upon consumption. New thinking is introduced, highlighting how microstructure conceptualisation might throw fresh light on how food is ultimately digested and taken up by the body. It begins to bridge the gap between the structure of food as consumed and the importance of food structures in the gastrointestinal tract, for optimal uptake of nutrients and how they respond to and even influence physiological processes. To introduce such thoughts, the effects of physiological triggers (e.g. enzyme action, pH and temperature jumps, dilution/concentration and how food interacts with bodily surfaces and fluids) are considered and reviewed as to how they might affect the fat and water structures that make up food microstructure. The impact on the incorporation of these concepts into food products, as well as how they fit with future food trends is also discussed." @default.
