Xylitol is an anticariogenic poliol with negative dissolution heat and presenting several biomedical properties. It can be used successfully in food formulations, pharmaceutical industries and in medical applications. The xylitol microbial production using lignocellulosic residues as substrate, is a challenge for the modern biotechnology and has several economic advantages in comparison with the conventional chemical process.
