Wildrice slices washed with 100 mg L-1 chlorine dioxide (ClO2), 50 mg L-1 hydrogen peroxide (H2O2) and 80 mg L-1 peroxyacetic acid (PAA) were packed in micro perforated polyethylene film for 21 d at 2 oC. Microbial growth, gas composition, soluble solids content (SSC), pH, whiteness index (WI), vitamin C, phenols, firmness and lignin were determined every 7 d. Compared with water washing, three sanitizers inhibited microbial growth and browning, delayed lignification, and maintained tenderness of few-flower wildrice. ClO2 was superior to other sanitizers in reducing microbial population and respiration activity, but caused significant SSC loss and lignification. PAA treatment retained better texture, higher vitamin C and phenol content than H2O2, but did not significantly affect microbial growth, WI and lignin. Our data suggested that PAA washing pretreatment has more potential to keep the quality of fresh-cut few-flower wildrice.
