It presents an experimental investigation of the structure and function of foam and surfactant proteins using standard techniques, including neutron scattering, infrared reflection absorption spectrometry (IRRAS), and other surface spectroscopies techniques. The chapter describes the mechanisms by which surfactant activity may operate in protein-only systems, using as examples surfactant proteins from a variety of sources, ranging from fungi to amphibians to mammals. The discussed examples of specific surfactant and foam-associated proteins are ranaspumins, ranasmurfin, latherin, and hydrophobins. The inherent biocompatibility, low toxicity, and biodegradability of natural proteins might be exploited in various areas, including the use of protein foams as three-dimensional scaffolds/matrices for tissue growth, wound healing and other biomedical applications, or as surface treatments to modify wetting properties, or for environmental remediation purposes." @default.
