These important societal concerns could provide a basis for developing middle school curricula. Students should know and appreciate what is essen tial for sustaining plants and animals in order to maintain human life. Students need to appreciate that the species of plants and animals supplying their food and fibers are a part of the web of life that functions as an integrated whole (Moore, 1987). Americans should know where their food and fibers come from. The land is the source of America's abundant food, fiber, and forestry products. Our wildlife takes up residency on these lands. Our water supply falls to the earth and filters through the soil to provide water for human consumption. Consumers are increasingly aware of food safety and environmental pro tection issues. American agriculture has been in the lime light and under intense observation. People are con cerned that the food they eat is safe, the environment is protected and not polluted, and our natural resources be recycled. What do youth know about the production of food? Do they know the basics of how plants and animals grow? Do they understand what is necessary to protect the soil? Do they understand the scope of business and industry related to the production of food, fiber, and the maintenance of our natural resources? The majority of American school children enter middle school knowing little about agriculture and leave only slighdy better informed. In a study of the agricultur al knowledge of 2,000 elementary, middle, and senior high school students in Kansas, fewer than 30% of the students gave correct answers to relatively basic ques tions (Horn & Vining, 1986). For example, only 25% of middle school students knew that the sprouting of seeds is called germination.
