This chapter reviews fundamentals of interfacial science, including concepts in equilibrium and dynamic adsorption of surfactants and in surfactant self-assembly. Some key aspects of food surfactants that influence interfacial tension and curvature energies are introduced. These concepts are related to formation strategies for micelles, nanoemulsions, microemulsions, liposomes, solid lipid nanoparticles and polymeric nanoparticles.
