Although cereal crops still predominate in providing a major proportion of the calories and proteins required in a basic diet, the utilization of other non-conventional, non-cereal grains is gaining overall popularity. One such alternative grain comes from the Amaranthus species and, in recent years, has been shown to possess great economic potential, as well as high nutritional value, especially for use in processed foods. Although amaranth grain is gaining overall popularity around the world, it probably enjoys its highest public appeal/fascination in Western societies as indicated by the numerous articles about it. The successful development of amaranth grain as a new field crop has been aided by a great deal of genetic variation available within the cultivated species. This broad range of genetic variability expressed within amaranth species provides resources for plant breeders to develop improved lines and has been paramount to the assembly of the 1,374 entries for amaranth by the Rodale Research Station, the United States, and to the U.S. Department of Agriculture collection housed at Ames, Iowa, as well as various other locations worldwide." @default.
