- W1597475717 abstract "Food additives are substances used in food industry in order to improve the food’s taste and appearance by preserving its flavor and preventing it from souring. We study the adverse effect of some food additives on the biochemical parameters in adult male albino rats by daily oral exposure of (15mg/kg body weight),(5mg/kg body weight) of Monosodium glutamate and Sodium nitrite respectively, for 4 weeks and show the alteration of the results of these biochemical parameters in serum of adult male albino rats associated with liver and kidney functions, lipid profile, cardiac enzymes and the effect of these additives on the biomarkers of the oxidative stress and antioxidant enzyme activities in tissue homogenates of liver and kidney. In comparison with the normal rats we found that body weight increased in rats treated with MSG while decreased in rats consumed NaNO 2 ; In the liver functions parameters there is an increase in GPT, GOT, ALP, total protein, Albumin, Globulin and billirubin of MSG while, in NaNO 2 there is an increase in GPT, GOT, ALP and billirubin activity while, there is a decrease in total protein, albumin and globulin. In our view of lipid profile there is an increased level in total cholesterol and TG concentration in MSG and decreased level of total cholesterol and TG in NaNO 2 while, there is a decrease in HDL concentration in both MSG and NaNO 2 . In cardiac enzymes there is an increase in LDH enzyme in both additives and there is a decrease in CK enzyme activity in MSG while, increased in serum of NaNO 2 . Our investigations showed an increase in kidney functions in both types of additives. In the oxidative stress observation there is an increase in LPO while, there is a decrease in CAT, GSH, and SOD activity in MSG and NaNO 2 ." @default.
