Als wichtigste seien genannt α-Amylase (in Speichel und Pankreassaft), α-Glucosidasen, ß-Galaktosidasen, Glucoamylase (in der „Bürstensaumregion“ des Mucosaepithels). Die meisten Ballast- und Füllstoffe — z. B. Cellulose, Hemicellulose, Pektinstoffe, Inulin — hingegen werden im Dünndarm nicht gespalten. Sie gelangen beim Verzehr in distale Bereiche des Magen-Darm-Traktes und fallen daselbst dem mikrobiellen Umsatz anheim bzw. werden mit den Faeces ausgeschieden. In ähnlicher Weise werden Nahrungsproteine vor bzw. bei ihrer Resorption bis zu den Aminosäuren abgebaut, wobei Proteasen bzw. Peptidasen des Magens (Pepsin), des Pankreas (Trypsin, Chymotrypsin, Peptidasen) wie auch solche des Mucosaepithels (Carboxypeptidasen, Aminopeptidasen, Dipeptidasen) ihre Wirkung ausüben [4]. Fette werden mit Hilfe der relativ unspezifischen lipoplytischen Enzyme des Pankreas verdaut; diese spalten die Fettsäuren bevorzugt am C1- und C3-Atom des Glycerins ab. Es entstehen vor allem Mono- und Diglyceride, die ihrerseits — in Gegenwart der als Emulgatoren wirkenden Gallensäuren und des Cholesterins — zusammen mit freien Fettsäuren wie auch mit ungespaltenen Triglyceriden in die Mucosazelle und von dort — nach weitgehender Resynthese zu Triglyceriden — in Form von Chylomikronen in den lymphalen Bereich gelangen [5]." @default.
