- W1719153759 abstract "Publisher Summary This chapter elucidates the effects of sucrose esters of fatty acids (SE) on freeze-thaw stability of oil-in-water (O/W) emulsion. SEs having lower HLB values is dissolved in hydrogenated rapeseed oil at 50.0°C. SEs having the higher values is dissolved in deionized water. The oil and water are combined at the constant rate of addition of the water, and mixed together by a mixer operating at 80 rpm for 20 min. O/W emulsions are then prepared using an ULTRA-TURRAX homogenizer at 50.0°C. Before freeze-thaw treatment, it is observed that emulsions prepared with oil-soluble emulsifier, notably SES5 and SESl 1, have smaller mean droplet size and narrow particle-size distribution. In general, the particle size of the emulsion increases after freeze-thaw treatment. Especially, the mean diameter of the emulsion using water-soluble sucrose esters, that is, SESl5 and SESl6, have about twice the diameter of the emulsion without freeze-thaw treatment. Moreover, the standard deviation of the particle size quadruple in the emulsion prepared with SESl5, and increase to about three times in the SESl6 sample. This shows that as well as droplet-size polydispersity, there may also be considerable heterogeneity in the nature of the interfacial layer around the emulsion droplets. SE is widely used as emulsifiers in the food, cosmetic and pharmaceutical industry.
