This new trend has led to the development of the so-called 'functional foods' among which belong foodstuffs fortified with dietary fibre. Acacia gum is a natural dietary fibre produced by Acacia trees. Resistant to human digestive enzymes, Acacia gum is not digested in the upper intestinal tract but is fermented in the large gut. Its fermentation leads to stimulation of the endogenous microflora (prebiotic effect) and the production of short-chain fatty acids. Health benefits are particularly well documented in the scientific literature. Thanks to its high molecular weight and its complicated molecular structure (highly branched arabino-galactan), Acacia gum does not exhibit the nutritional side-effects (laxative effect and/or flatulence) generally associated with other bulking agents or low molecular weight fibre sources. From a technological point of view, thanks to its very high solubility associated with a low viscosity and the absence of taste and odour, Acacia gum can be incorporated in large amounts to foodstuffs without disturbance of their organoleptic properties. In addition, Acacia gum, which has long been used for its functional properties (texturisation, stabilisation of emulsions, formation of edible films, compression…), can be used to combine the addition of dietary fibre with the performance of a technological function." @default.
