- W180070152 abstract "Honey is a healthy natural sweet substance produced by bees with nectar as its raw material, in which the nectar is a complex compound produced by plant gland in the form of sugar solution. For various reasons, honey is often falsified. This research is conducted to identify and characterize the physical and chemical properties of the original honey and ones which are sold from various sources and then comparing them. The sampling tehnicque used is taking 7 samples consisting of 2 parts, i.e. 2 original honey samples and 5 samples of honey from various sources around the researcher’s environment. The parameters observed including measuring density, storage in a freezer, flame test, degree of acidity, sugar reduction and enzyme activity test. Based on the results of the analysis, there is a difference in density beetwen the natural honey and ones on the market. If stored in a freezer, only the natural honey freezes. In a flame test, all samples lit. There are differences in the degree of acidity between the natural honey samples and other honey samples. In sugar reduction tets, significant differences do not occur, where as in the enzyme activity test, the original honey samples have a very high enzyme activities and the other 3 samples have a very slow enzyme activity and 2 samples do not have enzyme activity which can be concluded as fake honey." @default.
