Lam)—a member of the Convolvulaceae or morning glory family—is grown for its enlarged storage roots; sometimes the tender leaves and shoots are consumed as a green leafy vegetable. It is the only known natural hexaploid occurring in the Convolvulaceae. It is considered the only species of Ipomoea of major economic importance. This chapter highlights the cultivation of sweet potato and its uses and resources. It also discusses the cytology, genetics, germplasm, and reproductive biology of sweet potato. The chapter focuses on sweet potato breeding objectives and methods with an emphasis on the proper application of biotechnology in it. Use of sweet potato can be classified into three broad categories: (1) human food, (2) animal food, and (3) industrial uses. Objectives of breeding efforts must take into account the uses of sweet potato in growing region concerned because in any one area, sweet potato may be used for one or all of these three purposes. The criteria for breeding food-type sweet potatoes must be based largely upon the longstanding preferences of the people in the region. The degree of success in achieving breeding objectives depends on the skill of the plant breeder in incorporating needed traits into acceptable types (cultivars).
