- W1882835 abstract "With the relatively new technology of modulated temperature differential scanning calorimeter (MDSC), the analysis of starch gelatinisation was investigated. Starch gelatinisation is an important phenomena occurring in various food processing operation. Many factors including time, temperature, moisture, ingredients and processing condition may influence the gelatinisation process, thus the effect of heating rate, oscillation amplitude and period of MDSC were studied. Heating rate of 2.5°C/min to 7.5°C/min, amplitude of 0.5°C to 2°C and period of 30 seconds to 100 seconds were investigated with 50% moisture content of waxy starch-water system. In the experiment, both reversible and non-reversible heat flows were observed in MDSC. In reversible heat flow, three main glass transitions were seen from the results with the temperature range of 50°C to 70°C, 70°C to 90°C and above 90°C. Gelatinisation glass transition temperatures increase as the amplitude increases at the temperature range of 50°C to 70°C. In contrast, glass transition temperature decreases at the temperature above 90°C. Furthermore, specific heat capacity decreases as the increment of amplitude at the temperature range of 50°C to 70°C. Effect of period was shown as the increasing of oscillation period, the gelatinisation glass transition temperatures increased at temperature range 50°C to 70°C. The melting point (gelatinisation) temperature and the change of enthalpy decreased as the amplitude and period of oscillation increased were observed in non-reversible heat flow of MDSC. With the increase of heating rate had caused the melting point (gelatinisation) temperature to increase at the same time. These data proved to be significant and also fall into confidence interval of 95%." @default.
