- W1956695772 abstract "This chapter addresses whether the industrial trans fats produced during hydrogenation are different from naturally occurring trans fats from ruminant animals. It reviews the recent literature suggesting that natural Trans Fatty Acids (TFAs) might have different nutritional values than industrial TFAs and available scientific evidence related to this hypothesis. Such an objective requires accepting the following hypothesis: Consumption of industrial TFAs has no nutritional benefit and may negatively impact human physiology. Several observational and randomized clinical trials have confirmed that the consumption of industrial TFAs increases serum Low-Density Lipoprotein Cholesterol (LDL-C) and the total: High-Density Lipoprotein Cholesterol (HDL-C) ratio relative to saturated and cis-unsaturated fatty acid on an isocaloric basis. Mechanisms of action still need to be elucidated, but the overall consensus plan to improve health is for the removal of TFAs from the entire food supply chain. The chapter further discusses the chemistry and dietary sources of natural and industrial TFAs and the impact of these TFAs on blood lipid profile and coronary heart disease risk." @default.
