- W1966685787 abstract "Abstract A sensitive surface traction viscometer has been used to measure the viscosity ( μ ow ) of emulsifying agents adsorbing at oil-water interfaces and in some cases at air-water interfaces ( μ aw ). The selection of oils giving negligible μ ow is described and data are given of the μ ow and μ aw and their changes with aging of various nonionic, cationic, and anionic emulsifying agents. Low μ aw and μ ow are given by pure sodium lauryl sulfate (NaLS), by pure C 12 , C 14 , and C 16 trimethylammonium bromides, and by several unpurified water-soluble nonionic emulsifying agents. None of these materials appear to complex with either octadecanol or cholesterol monolayers at the oil-water interface to give enhanced μ ow , although the corresponding mixed monolayers at the air-water surface are very viscous. Small amounts of impurities in NaLS cause greatly enhanced μ aw with 0.4% or more of octadecanol in the oil phase. It is shown that the C 16 and C 18 homologs of NaLS cause this effect, except when the NaLS is above its critical micelle concentration in water, when the higher homologs are solubilized in the aqueous phase and low μ ow results. The viscous or rigid interfaces produced by the higher homologs are believed to be caused by these materials penetrating octadecanol monolayers to form viscous complexes. Foam fractionation is effective in removing these impurities from NaLS. Several oil-soluble nonionic emulsifying agents precipitate at oil-water interfaces, giving particulate interphases of moderate viscosity." @default.
