- W1974367520 abstract "スケトウダラ，イトヨリダイ，シログチおよびマアジすり身に0-30％の魚油を乳化した加熱ゲルにつき，破断強度，破断凹み，保水性および色調の変化を調べた．得られた結果は以下のとおりである．（1）混合系全体におけるタンパク質-水分比率を一定とし，これに魚油量を種々変化させて乳化した場合，魚油量の増加に伴って系全体におけるタンパク質濃度が低下するにもかかわらず，いずれの魚種のすり身においても，魚油添加量の増加に伴い乳化加熱ゲルの破断強度および凹みが増大した．（2）全ての魚種の乳化加熱ゲルの保水性は魚油乳化に伴って増大した．（3）全ての魚種の乳化加熱ゲルは魚油乳化に伴いハンター白色度が上昇した．マアジは赤色度および黄色度が減少した．以上のように，すり身に対する魚油の乳化は，健康機能性の付与のみならず乳化によりゲル物性の向上が認められること，保水性や白色度の向上効果も同時に認められることが確認された．" @default.
