- W1981123073 abstract "Many Gram-positive and Gram-negative bacteria are known to have autolysins, enzymes which are capable of hydrolysing wall polymers of the cells they are formed in [1-5]. These enzymes are believed to have an important physiological role not only in cell division but also in cell separation, in turnover of the walls, and in the formation of organized flagella [6]. In most studies of autolytic process, the bacteria were at first cultivated in either a chemically defined or rich broth medium. Cells were then harvested and transferred to a buffer solution in which the autolysis of the cells was followed [e.g. 1,2,7]. Autolysis has efficiently been promoted also by a downshock-upshock treatment [5] or by means of a detergent or by depletion of an essential amino acid or carbon source [8-11]. So far there has been no report on the autolysis of Streptococcus thermophilus. When these bacteria are used as cheese starters they are generally cultivated and maintained in skim milk. When properties of several S. thermophilus starters and their phages were investigated [12], two out of fifteen S. thermophilus strains behaved strangely when proliferated in broth instead of milk. After a fast exponential growth these two cultures committed a rapid kind of suicide by means of a highly effective autolytic process.
