- W1986913247 abstract "마의 수확 후 관리기술 최적화 일환으로 3년에 걸쳐 단계적으로 치유 처리 및 저장온도에 따른 품질변화를 분석하였다. 마 괴근은 11월 초 중순에 수확하였고 수확후처리로서 상온과 <TEX>$29^{circ}C$</TEX> 열풍 조건에 따라 기간을 달리하는 치유과정을 거쳤다. 치유처리 후 저장온도는 저온장해 발생여부 판단과 저장 기간 최적화를 위해 <TEX>$0.5-7.5^{circ}C$</TEX> 범위에서 검증과정을 거쳤고 저장기간은 4개월에서 7개월까지 점진적으로 연장하였다. 저장 후 유통품질 유지를 위한 처리로는 단시간 <TEX>$60^{circ}C$</TEX> 열풍처리 후 <TEX>$20^{circ}C$</TEX> 상온유통과 <TEX>$7^{circ}C$</TEX> 저온유통 효과를 비교하였다. 수확 후 치유처리는 마의 호흡속도를 감소시켰고 상온치유보다는 3-5일 열풍치유가 장기저장 후 경도를 유지하고 중량감소를 낮춤으로써 품질유지에 보다 효과적이었다. 다양한 저장온도를 설정한 장기 저장 실험결과, <TEX>$0.5^{circ}C$</TEX>에 저장된 마는 유통과정에서 저온장해 현상으로 판단되는 호흡속도의 증가와 조직붕괴 및 연화현상으로 인한 상품성의 저하가 빠르게 진행되었다. 적정 저장온도로는 저온장해 현상을 보이지 않으면서 품질 저하를 최소화하는 <TEX>$3-4^{circ}C$</TEX> 범위인 것으로 조사되었다. 장기저장 후 유통과정에서는 발근과 부패 억제 등 품질유지를 위해 저온유통이 필요한 것으로 나타났다. 연구결과를 종합해 볼 때, 마는 수확 후 열풍치유와 <TEX>$3-4^{circ}C$</TEX> 저장 및 저장 후 저온유통 과정으로 구성되는 최적화 프로그램 적용을 통해 7개월 이상 저장 후까지 품질유지가 가능한 것으로 판단되었다. Effects of curing treatments and storage temperature on the quality of Chinese yams (Dioscorea polystachya Turcz.) were investigated stepwise in three consecutive years for the optimization of postharvest handling procedures. Tuberous roots were harvested in early to mid November and cured under ambient or <TEX>$29^{circ}C$</TEX> heated air conditions for various periods according to the treatment conditions. Storage temperatures in the range of 0.5 to <TEX>$7.5^{circ}C$</TEX> were phased in to avoid chilling injury while examining storage potential from 4 to 7 months. As poststorage technology, short-term <TEX>$60^{circ}C$</TEX> hot-air exposure or low shelf temperature treatments were additively imposed. Curing treatments, especially heated air curing for 3-5 days tended to reduce the respiration and weight loss during storage while maintaining flesh firmness. Storage at <TEX>$0.5^{circ}C$</TEX> brought out typical chilling injury symptoms on the shelf with increases in respiration and lower flesh firmness by tissue breakdown resulting in the rapid loss of marketability. Optimum storage temperature appeared to be the <TEX>$3-4^{circ}C$</TEX> range which suppresses quality deterioration while avoiding chilling injury. Low shelf temperature seemed to be a necessary part of postharvest handling system to keep marketability through control of poststorage disorders such as rooting and decay. Overall results suggested that optimized postharvest program consisting of heated-air curing, storage at <TEX>$3-4^{circ}C$</TEX>, and low shelf temperature could extend storage potential of Chinese yam to longer than 7 months." @default.
