- W1996042708 abstract "Pretreatments were studied to assess their effectiveness in controlling the development of the hard-to-cook defect in black beans during storage in conditions that promote hardening. Of the methods tested only irradiation significantly reduced the rate of hardening. Total extractable phenols and in vitro peroxidase activity were measured over the storage period to find if changes in their relative amounts could be related to the rate of bean hardening. Determinations of extractable phenols over storage time showed that they decreased in some samples that showed hardening but this trend was not seen in all of the hardening bean samples nor was it seen exclusively in the hardening bean samples. However, it is apparent that, within each treatment, phenol degradation proceeded more rapidly under high temperature, high humidity conditions. It was concluded that the measurement of total extractable phenols may not have been sufficiently specific to detect changes in the phenol fraction important in either lignification or tannin anabolism. Peroxidase specific activity in beans stored in conditions promoting the hard-to-cook defect increased during the initial storage period but then decreased, either due to inactivation or binding. High levels of extractable peroxidase activity was not related to a greater degree or rate of hardening. Dans le but de contrôler le développement du défaut de résistance à la cuisson des haricots noirs au cours de l'entreposage dans des conditions qui favorisent le durcissement, l'efficacité de divers prétraitements fut évaluée. De toutes les méthodes étudiées il n'y a que l'irradiation qui a réduit le degré de durcissement d'une façon significative. Les phénols extractibles totaux et l'activité de la peroxydase in vitro furent mesurés tout au cours de la période d'entreposage pour établir si des changements dans leurs niveaux relatifs pouvaient être corrélés avec le degré de durcissement des haricots. Les déterminations des phénols extractibles au cours de la période d'entreposage ont démontré qu'ils diminuèrent chez certains échantillons qui ont durci mais cette association ne fut pas générale chez tous les échantillons et ne fut pas exclusive aux échantillons de fèves qui avaient durci. Il fut conclu que la détermination des phénols extractibles totaux n'est probablement pas suffisamment spécifique pour détecter des changements dans la fraction phénol de nature à influencer la lignification ou l'anabolisme du tannin. L'activité spécifique de la peroxydase dans les haricots stockés dans des conditions qui favorisent le durcissement augmenta au cours de la période initiale d'entreposage pour ensuite diminuer probablement à cause d'inactivation ou de liaison. Les niveaux élevés d'activité de la peroxydase extractible ne furent pas corrélés à un degré ou à un taux plus grand de durcissement." @default.
