With the development of the field, the emerging dis cipline of nutrition education is beginning to realize that it can draw more broadly from the behavioral and social sciences to clarify why we eat what we do and to provide strategies for de signing curricula that are more effective in developing the con cepts, attitudes, and eating habits that are conducive to long term health. The recent rise in public interest in nutrition and health and the increased availability of funding for nutrition education in schools have provided nutrition educators with the opportunity to rethink the goals, content, and process of nutrition education. The study reported here has attempted to contribute to this process of reconceptualization of nutrition education by using some notions derived from the developmental theory of Jean Piaget to elucidate how children think about food and eating and to suggest issues that should be considered in the design of food and nutrition curricula." @default.
