• W1998840262 abstract "Abstract The choice of an appropriate emulsifier is important in the formulation of a stable emulsion. Air/ water and soyabean oil/water interfacial tensions were evaluated for Brij-35 and Pluronic-F 68 as a function of concentration and temperature. From the data collected, different mathematical equations were tested and a logarithmic equation, described earlier in the literature for other systems, gave the best fit for all interfaces. The difficulties encountered in the evaluation of different constants are resolved by the use of a computer. The first derivative of the selected equation is used to calculate the Gibbs surface excess for the 12 systems studied. This parameter serves in turn to calculate the area within which a molecule at the interface can expand. A comparison is made of the behavior of the molecules at the various interfaces. This model, as well as its application, will further be used to compare the behavior of other or mixed interfaces with and without the presence of different additives." @default.
