- W2000628442 abstract "ObjectiveTraining for elementary teachers provided food and nutrition knowledge to increase their background to effectively teach the nutrition education materials in the Growing Healthy Kids School Enrichment Kit.DescriptionA 1 day workshop was tailored for teachers of each grade (K-2); 1 workshop focused on kindergarten teachers; the next workshop on 1st grade teachers, and the 3rd workshop on 2nd grade teachers. Workshops included the nutritional needs for the specific age group, basic food preparation skills, developing healthy snack ideas for parents, and a review of the materials in the grade appropriate kits.EvaluationTeachers completed an evaluation at the end of the workshop and a one year follow-up evaluation was conducted after teaching the curriculum. All respondents (100%) felt that attending the workshop was worthwhile, that they learned something valuable about nutrition and the material was useful. Most of the teachers (84%) plan to spend more time on nutrition education with their students than they did prior to the workshop. The majority of respondents (64%) also plan to spend more time doing food preparation activities with their students. Two confidence scales were created for “efficacy expectations” and “outcome expectations” (scale:1=not at all confident to 4=very confident). The outcome expectations did not have a significant difference; however, the efficacy expectations score was significant (p<0.1). We concluded that the workshop had a positive effect on the confidence in efficacy expectations of teachers attending the workshop. Follow-up surveys indicate that 95% of teachers characterized the students as “very engaged”. Teachers reported that some elements of the curriculum appeared to be enjoyed by students more than others; activities/games were enjoyed the most, and videos the least. Conclusion and ImplicationsOverall, respondents reported that they were very pleased with the program; it was well organized, convenient, and easy to teach.FundingUSDA Grant #2011-67001-30011.
