Der Zusatz von gesättigten Fettsäuren (C14–C18) in Konzentrationen von 0,34 bis 0,57% verringert die Verkleisterungstemperatur (VT) der Weizenstärke von 82.5%C auf 81°C, während die Ölsäure C18:1 die VT erhöht. Die Ölsäure bewirkt eine Zunahme der Viskosität. Durch Zusatz von Palmitinsäure bzw. Stearinsäure (0,57%) stieg die Viskosität geringfügig an, während des weiteren Erhitzens folgte ein deutlicher Anstieg. Im Gegensatz zu den gesättigten Fettsäuren erhöhen die Monoglyceride die Verkleisterungstemperatur. Eine Ausnahme stellt das Monoglycerinoleat dar, das die VT verringert. Monoglycerinmyristat und Monoglycerinlinoleat in Konzentrationen von 0,34 bzw. 0.57% erhöhen die Anfangsviskosität (M1). Monoglycerinäther, die erstmalig in dieser Hinsicht untersucht wurden, beeinflussen die Viskositätseigenschaften unterschiedlich. So erniedrigt rac-1-O-Oktadecylglycerid in beiden Konzentrationen die VT von 82.5 auf 81°C. Auch die Endviskosität nimmt deutlich ab. Hingegen erhöht rac-1-O-[(Z)-9-Oktadecenyl]glycerol die VT von 82,5 auf 85,5°C. Anfangs- und Endviskosität wurden ebenfalls erhöht." @default.
