The extruded products are usually stable, with a long shelf life, microbiologically safe, and with an imparted texture, which increases their acceptability. They can be ready-to-eat products or ground and becoming ingredients added to diverse products' formulation. Extrusion is a high-temperature short-time food process method that inhibits most of the biological events but preserves most of the nutritive value of the processed food. Because of the elevated temperatures used throughout the extrusion process, some concern was devoted to the potential deleterious effects of this processing to the nutritive value of foods. However, in usual conditions of processing, most of the nutrients in the feed material are preserved, and only the beneficial effects occur. This article will describe the most common chemical changes and how they affect the nutritive value of the extruded food." @default.
