- W2002152458 abstract "Meat-tenderising processes of four proteolytic enzymes, calpain, ficin, papain and bromelain, were directly observed by FT-IR spectroscopy to compare their digestion properties. After soaking a lean beef strip in enzyme solution for 4 min, IR spectra were continuously collected for 30 min using an ATR accessory. The resulting IR spectra were analysed by chemometric techniques to extract information on time-dependent changes taking place in beef protein caused by each protease. The first and second factor scores obtained from factor analysis of the combined IR spectra clearly indicated time-dependent changes specific to each enzyme. Factor 1 scores in ficin-treated beef greatly increased with time. On the other hand, increases in factor 2 scores with time were observed in calpine-, papain- and bromelain-treated beef, but the increase was negligible in ficin-treated beef. Cluster analysis classified factor loading patterns from each IR data set according to their similarity. Eigenvalue plots from backward evolving factor analysis (EFA) of IR spectra of papain- and bromelain-treated beef succeeded in separating vigorous and weak digestion periods.
