- W2004608052 abstract "水分量，蒸煮温度，保持時間がそれぞれ異なる蒸煮大豆及び納豆を調製し，動的粘弾性，静的弾性係数，および「硬さ」の官能評価を指標として，調製条件による物性変化を調べた． 同時に，物性変化の主因と考えられる細胞壁性状の変化に関わる指標として，蒸煮大豆から溶出するホウ素の定量を行い，以下の知見を得た．（1） 蒸煮大豆および納豆の弾性係数Eと貯蔵弾性率Eprime;は，飽和水分状態の大豆では品種にかかわらず，蒸煮温度の上昇に対して有意に低下した．（2） 納豆の弾性係数Eまたは貯蔵弾性率Eprime;と「硬さ」の官能評価値の間には，ぞれぞれ－0.75と－0.67の負の相関が認められた．また，納豆が「硬い」と感じさせない弾性係数Eと貯蔵弾性率Eprime;の範囲は，それぞれ200kPaと800kPa以下であった．（3） 水分量が80％以上，保持時間が15min以上，蒸煮温度121℃以上の条件で蒸煮調製することにより，「硬い」と感じさせない納豆を調製できることが示された．（4） 水分量と蒸煮温度の上昇に伴って大豆浸出液中でのホウ素量の増加が認められ，品種によらず，弾性係数Eが300kPa以下の蒸煮大豆では，ホウ素量と弾性係数Eとの間に負の相関が認められた．" @default.
