Les polysaccharides ont une tendance à l'agrégation. Les glucans forment souvent des agglomérats de molécules. Une telle propriété peut jouer un rôle important dans la formation de la plaque. Des molécules individuelles apparaissent sous la forme de particules ellipsoïdes. Les polysaccharides de Streptococcus mutans, Streptococcus sanguis et Streptococcus salivarius ont respectivement une largeur moyenne de 285 Å, 248 Å et 282 Å et une hauteur moyenne de 52 Å, 41 Å et 46 Å. Die Polysaccharide hatten die Tendenz, sich zusammenzulagern. Die Glukane bildeten häufig Haufen aus zahlreichen Molekülen, die miteinander verklumpten. Diese Eigenschaft dürfte für die Entwicklung der Zahnplaque von Bedeutung sein. Einzelne Moleküle traten als ellipsoide Partikel auf. Die Polysaccharide von Streptococcus mutans, Streptococcus sanguis und Streptococcus salivarius besaβen eine mittlere Länge von 285 Å, 248 Å bzw. 282 Å und eine mittlere Höhe von 52 Å, 41 Å bzw. 46 Å.
