- W2013520966 abstract "A spin label investigation using small spin labels dissolved in some model membrane systems has been carried out on systems composed of ferricytochrome c, phosphatidylethanolamine or phosphatidylcholine, and water. The same probes have been used in an investigation of the corresponding binary systems consisting of protein and water and of lipid and water with variable composition. The results are consistent with a fluid lamellar structure and clearly indicate two distinct environments in the membrane preparations: (1) a non-polar, essentially pure lipid hydrocarbon environment, and (2) a more polar environment probably consisting of protein, water and the polar head groups of the phospholipids. Temperature investigations of the correlation times in the model membrane systems show that the non-polar region varies smoothly in its properties with temperature as a typical fluid while the polar region undergoes a freezing phenomena between −5 and −10°C. Above the freezing point the polar environment shows an increasing correlation time with increasing temperature contrary to the behavior expected of a simple fluid and to the behavior exhibited by the non-polar region of the membrane." @default.
