Storage of banana at optimum temperature could prolong pre-climacteric and storage life of banana cv. Raja Bulu. Therefore, to achieve uniform ripening, artificial ripening by exposing the fruit to exogenous ethylene was done. The objective of this study were (1) to examine the best temperature of storage (10C and 15C) to maintain quality of banana cv. Raja Bulu before ripening, (2) to examine storage life before ripening (5, 10 and 15 days), and (3) to investigate quality of banana cv. Raja Bulu after storage and ripening. Green mature of bananas were stored at 10C and 15C for different period of storage (5, 10 and 15 days) and allowed to ripen by injecting 100 ppm of ethylene at 25C for 24 h. After ripening process, banana fruits were placed at ambient temperature room. Respiration rate banana cv. Raja Bulu during storage at 10C, 15C and ambient temperature was 5,4 ml CO2/kg h; 7,2 ml CO2/kg h and 28,1 ml CO2/kg h. The climacteric peak of CO2 respiration rate during ripening was achieved at 51 h for banana stored at 10C for 5 day, 24 h for banana stored at 10C and 15C for 10 day, 15 h for banana stored at 10C and 15C for 15 day. The optimum stage for eat-ripe of banana was at 3 days after ripening treatment which was indicated by the changes of colour (fruit completely yellow) (peel colour a* = -4.43 and b* = 60), total soluble solid i.e. 29.0% brix, firmness i.e. 0.34 kgf. It was obtained that the weight loss for banana fruits ripened after 15 days of storage in both 10C and 15C were 19.09% and 24.05%. It can be concluded that banana fruit cv. Raja Bulu was possible to store at storage temperature of 10C for 15 days. Key word: banana, shelf life, ripening." @default.
