There is asymmetry in the dependence of the isotherms on pH at each side of the isoelectric point, the monolayers are more expanded when the substrata are alkaline. This effect can be explained by taking into consideration the hydrogen bonds between the side chains of the protein molecules. The influence of temperature on these monolayers has only been studied at the air/water interface; it depends on the pH. On acid substrata the surface pressure, for a given value of the area, goes through a minimum with increasing temperature; however, on alkaline solutions the pressure increases for increasing temperature. From the variation of the surface pressure with temperature the spreading entropies and enthalpies have been obtained and its physical meaning in terms of the intramolecular forces has been discussed." @default.
