In that case, Merkatz (1) described a 36-year-old Negro female chronic starch eater whose dietary history showed minimal protein intake. The suggested primary relationship between starch ingestion and parotid enlargement might be subject to criticism since parotid swelling has been attributed alone to various states of malnutrition. Recently a patient with chronic starch ingestion and bilateral parotid enlargement came to our attention. This patient had adequate nutritional intake.
