Trans-Unsaturated Fatty Acids in Animal Fats The depot- and organ fats of the animals exhibit a different proportion of trans-unsaturated fatty acids. This can be considerable and attains the value of 11% in ruminants; contrarily in non-ruminants the trans-isomeric fatty acids are found very rarely or not. In the same animal differences in values of transfatty acids are to be found depending upon the organ of the position of the animal's body. The same depot fat shows in various animals of the same family appreciable differences in the content of trans-unsaturated fatty acids." @default.
