- W2022167008 abstract "The cooking extrusion of wheat, rye, barley and oat flour has been studied and modelled using response surface methodology with changing process variables using two screw configurations. The pressure and the product temperature at the die and the total specific energy consumption were measured during the trials. Product properties such as expansion ratio, degree of gelatinization, water absorption and water solubility were analysed. Second-order polynomials, containing all the cereals and both the screw configurations as variables, were computed to model the measured process and product variables. The high correlation between the models and the measured data shows that the calculated second-order polynomials are sufficiently accurate and valuable tools in interpreting the multi-variable field of extrusion cooking. Based on the models, the graphical presentations have been computed to illustrate the effects of the extrusion variables on the product properties of each cereal, as well as to give an understanding of the factors affecting the extrusion process." @default.
