Durch den ß-Amylaseabbau wurden sehr breite molekulare Verteilungen erhalten, wobei der Abbau der hochmolekularen Anteile langsamer als der der mittel- und niedermolekularen Anteile erfolgte. Unter der Annahme, daß kurzkettige Amylosen rascher abgebaut werden als langkettige, kann ein Mehrkettenmechanismus beim β-Amylaseabbau angenommen werden. Gel Chromatographic Investigations on Hydrolytic Degraded Amyloses. Hydrolytic degraded amyloses from potatoes were investigated by column chromatography in a Sephadex G-200 and Sepharose 2B gel system. The columns were calibrated with synthetic amyloses of almost uniform molecular weight species. The elution curves of potato amylose degraded with mineral acids showed a simultaneous decline of the components with high and low molecular weight, according to an exponential scheme. When potatoe amylose was incubated with β-amylase a wide distribution of degradation products was obtained. The degradation of the constituents with high molecular weight was much slower than of those having an average or a low molecular weight. This result makes it very likely that the degradation of amylose by β-amylase is following a multi chainaction mechanism." @default.
