- W2022761018 abstract "The effect of low-voltage electrical stimulation (56 V effective voltage, with polarity reversed every 10s) on lamb carcasses stored forzen for one year was studied. Non-electrically stimulated carcasses frozen pre-rigor showed evidence of thaw rigor during the first six months of storage in weight loss, water holding capacity, and shear strength values. Electrical stimulation and pre-rigor conditioning prevented thaw rigor in the carcasses. No significant differences in protein solubility (in a 5% NaCl solution) were observed between the carcasses in the different treatment groups during the frozen storage period. Oxidative rancidity levels remained low throughout storage, regardless of the treatment applied. Les auteurs ont étudié l'influence de la stimulation électrique sous faible tension (tension effective de 56 V avec inversion de polarité toutes les 10 s) sur des carcasses d'agneau congelées entreposées pendant un an. Les carcasses non stimulées électriquement, congelées avant apparition de la rigor mortis présentaient après décongélation pendant les six premiers mois d'entreposage des signes de contracture, de pertes de masse, de capacité de rétention d'eau et de résistance au cisaillement. La stimulation électrique et le conditionnement par réfrigération avant rigor permettaient d'éviter la contracture à la congélation des carcasses. On n'a pas observé au cours de l'entreposage de differences nettes de la solubilité des protéines (dans une solution à 5% de NaCl) entre les carcasses des différents groupes de traitement. Les niveaux de rancissement par oxydation restaient faibles pendant toute la dureée de l'entreposage, quel que soit le traitement appliqué." @default.
