- W2029051142 abstract "加工用や飼料用に育成された多収性稲における米粉パンの品質の品種間差を見いだすこと，米粉パンに適する品質特性を見いだすことを目的として，9品種の多収性稲とコシヒカリを用いてグルテンを添加した米粉パンを作成し，米粉の特性（アミロース含有率，タンパク質含有率，粒度，損傷デンプン含有率）と米粉パン製パン特性（パン比容積，硬さ）とを比較した．多収性稲のアミロース含有率はコシヒカリと同等か高く，タンパク質含有率はいずれもコシヒカリよりも高かった．パンの比容積と相関があることが示されている損傷デンプン含有率はいずれの品種でも4％以下と低い値を示した．また，いずれの多収性稲から作られた米粉パンも，コシヒカリのパンよりケービング程度が少なくパンの比容積が同程度か大きかった．しかし，アミロース含有率の特に高いモミロマンや糊化開始温度の高いクサホナミの米粉パンの硬さは，コシヒカリの米粉パンよりも高い値を示した（モミロマン : 1.4倍，クサホナミ : 3.0倍）．なお，タンパク質含有率とパンの比容積および硬さとは相関が見られなかった．これらの結果から，中程度のアミロース含量で糊化開始温度が高くない多収性稲を用いることでコシヒカリと同等かそれ以上に形状の優れた米粉パンができることが示された．" @default.
