- W2034361037 abstract "External layers of citrus fruit peel evinced a marked increase in phenylalanine ammonia-lyase (PAL) activity after irradiation with 200 krad doses of gamma radiation. Maximum enzyme activity was attained one day after irradiation. Thereafter PAL activity rapidly decreased to control values in fruits which did not show visible damage symptoms later upon storage, but remained relatively high for several days in those fruits which later showed peel damage. Accumulation of phenolics in cells was demonstrated and may be explained by the enhanced PAL activity. The connections between irradiation, enzyme activity, phenolics and damage are briefly discussed. Les couches externes de la pelure de fruit de Citrus ont montré un accroissement marqué d'activité de la phénylalanine ammoniac-lyase (PAL) après irradiation par des doses de rayons gamma de 200 krad. L'activité enzymatique maximale est atteinte un jour après irradiation. Ensuite l'activité du PAL décroît rapidement jusqu'aux valeurs témoins dans les fruits qui ne montraient pas de dommage visible après stockage. L'activité reste relativement élevée pendant quelques jours dans les fruits qui montrent ultérieurement un dommage de la pelure. L'accumulation de phénols dans les cellules a pu être démontrée. Elle peut être expliquée par un accroissement d'activité du PAL. On discute brièvement les connections existant entre irradiation, activité enzymatique, phénols et dommage. Äussere Schichten der Schale von Zitrusfrüchten zeigten nach Behandlung mit 200 krad Gammastrahlung eine deutliche Zunahmeder Phenylalanin-Ammoniak-Lyase (PAL). Maximale Enzymaktivität wurde einen Tag nach Bestrahlung erreicht. Danach nahm die PAL-Aktivität rasch bis zu den Kontrollwerten ab, in den Früchten, die später nach Lagerung keine sichtbaren Schäden aufwiesen; sie blieb jedoch einige Tage lang relativ hoch in Früchten, die später Schäden an der Schale zeigten. Es wurde eine Akkumulation von Phenolverbindungen in den Zellen nachgewiesen, die durch die erhöhte PAL-Aktivität zu erklären sein dürfte. Die Beziehungen zwischen Bestrahlung, Enzymaktivität, Phenolverbindungen und Schädigungen werden kurz diskutiert." @default.
