It affects aroma retention, caking and stickiness, rehydration capacity and final moisture distribution. Collapse in amorphous materials is usually related to glass transition, which in turn depends on temperature and moisture content. In the present study, the effects of glass transition on the rates of collapse of non-crystallizing carbohydrates were investigated. Decrease in bulk specific volume (V) was measured as a function of temperature and moisture content. Decrease in specific volume with time followed first-order behavior, allowing the calculation of specific relaxation times for collapse. Results indicate a strong dependence of rates of collapse on temperature (T) and on the quantity (T−Tg), where Tg is the glass transition temperature. The rates of collapse could be predicted using either the Williams-Landel-Ferry (WLF) or the Arrhenius equations. Most of the effect of moisture is due to depression of Tg, and the resultant increase in T−Tg) at constant temperature." @default.
