- W2056538243 abstract "Aqueous phases from full recipe wheat flour bread doughs were isolated from doughs made from wheat cultivars Mercia and Riband. The influence of recipe variables on the surface properties of the aqueous phases was studied. Variables studied included water addition, wheat cultivar, addition of fat and the inclusion of diacetyl tartaric acid esters of monoglycerides (DATA esters). The surface tension of the aqueous phase decreased, as did the surface viscosity of the films formed at the air-aqueous phase interface, as more water was added to the doughs. This was also observed by changing the wheat cultivar from Mercia to Riband. Increasing water addition and change of cultivar from Mercia to Riband was also detrimental to the crumb structure of the bread. Addition of fat to dough resulted in an increase in the surface tension of the aqueous phase, suggesting that fat may sequester lipid-like material. This was supported by analysis of total fatty acid methyl ester (FAME) in the isolated dough aqueous phases. DATA esters improved the crumb structure and loaf volume of bread but did not appear to affect the surface tension of the aqueous phases. FAME analysis of the aqueous phases suggested that DATA esters may also sequester lipid-like material. Addition of fat and DATA esters to recipes did not affect the bulk rheology of the doughs." @default.
