- W205677218 abstract "Oxygen is a catalyst of the Maillard reaction In vitro and a fixative of damage resulting from glycation of proteins in vivo. Oxidative pathways of the Maillard reaction are initiated both by autoxidative glycosylation and by oxidative fragmentation of Schiff base or Amadori adducts to protein, followed by continued reaction of sugar-derived oxidation products with protein. Work in our laboratory suggests that autoxidative glycosylation is the initial step in the Maillard reaction In vitro at physiological pH and temperature, and that the major dicarbonyl product formed in this reaction is glyoxal, rather than glucosone. At later stages in the reaction, rearrangement, hydrolysis and both oxidative and non-oxidative fragmentation reactions of Amadori adducts yield deoxyglucosones, pentoses, tetroses and smaller sugars which propagate the Maillard reaction. The kinetics of formation of glycoxidation and advanced glycosylation end-products in tissue proteins in diabetic animals suggests that autoxidation of glucose or other carbohydrates also contributes to the Maillard reaction in vivo." @default.
