- W205743888 abstract "Citrate, which is present in the milk at various levels depending on the species of mammals, can be metabolized by a range of lactic acid bacteria (LAB) to the end products acetoin, diacetyl, acetaldehyde, acetate, and carbon dioxide. From a commercial perspective, citrate metabolism by Leuconostoc spp. and Lactococcus lactis subsp. lactis biovar diacetylactis is of major importance in some cheese varieties, cultured butter, and buttermilk as the end products of metabolism impact on flavor and/or texture development. Diacetyl, acetaldehyde, and acetate contribute directly to flavor formation, while acetoin has an indirect effect on flavor. Carbon dioxide plays an important role in the texture of some dairy products such as Dutch-type cheese where it is responsible for eye formation. The biochemical pathways of citrate metabolism are now well defined and a clear understanding of the genes associated with these pathways has emerged. Due to the industrial importance of these pathways, much attention has been given to metabolic engineering strategies to enhance citrate metabolism and to direct it toward increased levels of particular end products, in particular diacetyl." @default.
