- W2057452641 abstract "一般に，国内では，一部の地域を除きアフラトキシン汚染が起きる可能性は低いと考えられているが，ペニシリウム属のカビが産生するパツリンやフザリウム属のカビが産生するデオキシニバレノール等は，我が国の気候条件でも産生される．近年，これらのカビ毒の国内での汚染が注目され，詳細な汚染実態の把握と，防御対策の開発が急務となっている．今回は，国内で起きているカビ毒汚染の状況と，リンゴ等のパツリン汚染について，その汚染の傾向から防御の対策について述べる．国内での自然汚染が確実に普遍的に起きているカビ毒は，麦中のデオキシニバレノールとニバレノールとリンゴ中のパツリンである．国内で汚染が起きている可能性が高いものに，麦中のゼアラレノン，ブドウ中のパツリン，黒糖中のアフラトキシンがある．また，穀類等のオクラトキシン汚染も国内で起きている可能性がある．国産リンゴを原料として使用するジュース製造工場から腐敗・傷害のため廃棄されたリンゴについてパツリン汚染調査を行った結果，一部に高濃度のパツリンの自然汚染が起きていることが判明し，低温保存でも保存期間が長くなるとパツリン汚染が進む傾向が認められた．リンゴのパツリン汚染を防止するには，汚染が起きている場所を特定し，菌の排除を行うこと，傷の付いたリンゴは長期間保存せず，早く加工してしまうことも効果的であると考えられる．" @default.
