- W2078646722 abstract "Developing maize kernels contain three starch branching enzymes. Homogeneous branching enzyme I has now been shown to be capable of branching amylose as well as amylopectin but not glycogens. The formation of glycogen-like molecules by the further branching of amylopectin suggests that branching enzyme I plays a role in phytoglycogen formation. Its presence in nonmutant kernels which do not accumulate phytoglycogen, however, indicates that amylopectin per se is not accessible to branching enzyme I for phytoglycogen formation. Treatment of sugary (su) starch granules with enzyme I resulted in soluble phytoglycogen-like glucan. No glucan was released by treatment of nonmutant starch granules. In addition, nonsolublized amylopectin and amylose fractions of the su starch were branched during the incubations. These observations are consistent with plastid changes which show a conversion of starch granules to phytoglycogen in sugary endosperm cells. Der mögliche Zusammenhang zwischen Stärke und Phytoglykogen in Süßmais. 2. Teil. Die Rolle des verzweigenden Enzyms I. Maiskörner in der Entwicklung enthalten drei stärkeverzweigende Enzyme. Das homogene verzweigende Enzym I erwies sich als fähig, sowohl Amylose als auch Amylopektin, jedoch kein Glykogen zu verzweigen. Die Bildung glykogenartiger Moleküle durch die weitere Verzweigung von Amylopektin zeigt, daß das verzweigende Enzym I bei der Phytoglykogenbildung eine Rolle spielt. Seine Anwesenheit in nichtmutanten Körnern, die kein Phytoglykogen ansammeln, zeigt jedoch andererseits, daß Amylopektin an sich dem verzweigenden Enzym I für die Bildung von Phytoglykogen zugänglich ist. Die Behandlung von „zucker”︁-(su)-Stärkekörnern mtt Enzym I führte zu löslichem phytoglykogenartigem Glucan. Bei Behandlung nichtmutanter Stärkekörner wurde dagegen kein Glucan freigemacht. Darüber hinaus wurden ungelöste Amylopektin- und Amylosefraktionen der su-Stärke während der Inkubation verzweigt. Diese Beobachtungen werden durch Plastidänderungen bestätigt, welche die Umwandlung von Stärkekörnern in Phytoglykogen in su-Endospermzellen zeigen." @default.
